Caprese Salad with a Twist (Serves 8 as a side dish)

Add a few extra ingredients to a Caprese Salad to make a whole new taste!

I was expecting 10 people for dinner one night and really wanted a Caprese Salad flavour. I didn’t have enough Bocconcini balls and tomatoes to make a big salad for that many people, so I decided to add a few other bits and pieces. It turned out to be delicious, colorful and everyone loved it!

Caprese Salad with a Twist

Serves: 6 -8 as a side Prep Time: 15 minutes
Nutrition facts: 200 calories 20 grams fat

Ingredients

  • 1 Container of Baby Bocconcini cheese
  • 1/2 bag of Rocket finely chopped
  • Large handful of mint and basil leave finely chopped
  • 1 yellow capsicum chopped
  • 4-6 tomatoes chopped
  • 1/4 red onion finely chopped
  • 1 bag of Baby Spinach leaves
  • Maldon sea salt flakes
  • Freshly ground black pepper
  • 2 tablespoons Extra Virgin Olive Oil
  • Juice of 1/2 lemon

Instructions

Chop each of the bocconcini balls in half. Chop up your capsicum, tomatoes, rocket and red onion.

Mix all together in a large bowl.

Add the bag of baby spinach leaves.

Finely chop the mint and basil mixing well into the salad.

Mix the olive oil, lemon juice and seasonings, then add to the salad tossing it well.

Notes

You can use any color capsicum, but the yellow looks great. And cherry tomatoes also work really well.
