Choc Chip and Vanilla Buns

Who doesn’t love anything with choc chips in it? Children especially love that sweet surprise, so that’s why I made this for my 23 month old nephew when he came for a visit.

A bun is similar to a small cake, and can be referred to as anything yeast based (these are not), dough-like or something which resemble rock cakes.

In case you are confused, I think you can call it a bun or a cake and be equally correct. As I am a home-cook, I have my own set of what’s what, thanks to Mum, Grandma and life experience.

Little Harry didn’t care what it was called, he loved it. Gobbled it all up while watching toy fire-engines putting out make-believe fires and other exciting adventures. His Mum Georgia loved the almond version with her cup of tea.

Harry got the nut free version which is a good idea to prevent choking hazards. If you want your children to enjoy the protein and health benefits of almonds, use 1/2 cup of ground almonds in this recipe. Adjust milk as advised to create the right batter consistency.

This batch created about 12 quite large buns, so you could definitely create 16 – 18 small ones.

Choc chip and Vanilla Buns

Serves: 12 - 14 Prep Time: 10 minutes Cooking Time: 15 minutes 15 minutes

Ingredients

  • 3 cups white Self Raising flour
  • 3/4 cup raw sugar
  • 150g cold butter
  • 2 large eggs
  • 3/4 cup full cream milk plus extra
  • 1 cup choc chips
  • 2 teaspoons vanilla essence
  • pinch of sea salt
  • Almonds (optional)

Instructions

Step 1

  • Turn oven on to 180 degrees Celsius, or 350 degrees Fahrenheit, or Moderate Oven
  • Put flour, butter and salt into a food processor or Thermomix and blend until it resembles breadcrumbs.
  • Tip flour mixture into a large bowl.
  • Add eggs, milk and vanilla essence
  • You should have a stiff, thick batter. Add extra milk until you have this consistency.
  • Fold in choc chips.

Step 2

  • Line baking trays with baking paper
  • Place tablespoons full of batter onto trays (6 per tray)
  • Place one almond in the centre of each cake.
  • Keep one tray of cakes almond free for very young children.
  • Bake in pre-heated oven for 15 minutes until golden.

Notes

You could use a pecan nut in the centre of each cake instead of almond. I use almonds because they take on a roasted flavor which is delicious with choc chips and vanilla.
