Low G.I Black Rice with Tuna and Snow-peas

When you just want something really easy, that tastes fantastic.

If you want something super quick and easy, try this tasty dish. I had some black rice which I’d bought at the central market and fresh snow-peas. You could just as easily use another kind of rice.

The flavor burst comes from the lemon and natural yoghurt which go perfectly with all these ingredients. I do all the food prep while the rice is cooking, so it all comes together as soon as the rice is cooked.

Just keep the onion and snow-peas slightly crunchy. If you’re worried about over-cooking them, start your rice cooking 15 minutes earlier.

Serves: 4 Prep Time: 25 minutes Cooking Time: 25 minutes 25 minutes

Ingredients

  • 1 1/2 cups of black rice
  • 1 large red onion chopped
  • 1 250g tin of tuna
  • handful of snow-peas (mangetout)
  • 1 lemon
  • Natural or Greek yoghurt
  • Maldon sea-salt flakes
  • Black pepper
  • Olive oil

Instructions

Start cooking the black rice first in a rice cooker according to directions. Add a pinch of salt

Chop up the red onion, add to frying pan with the olive oil

Slice the snow-peas into thirds (roughly), add to the onion.

Add the drained tuna

Squeeze a whole juicy lemon into the mixture and season with salt and pepper

Cook lightly so the onion and snow-peas are still slightly crunchy.

When the rice is cooked, serve together with a large blob of yoghurt on top.

So good! I went back for seconds and added another spoon of yoghurt. Alternatively serve with a medium rare tuna steak on top. Extra squeeze of lemon and voila!
